Beth knows what to do with herbs. Instead of keeping them to seasoning or dressing, she stuffs fresh thymes, sage and rosemary along with oranges into the roasting chicken. Herbs would permeate into the meat and enhance the flavor and aroma of the meat. This is what I call as healthy cooking, fast and straight from the kitchen garden. One can ge creative enough with the Greek Oregano, basil, coriander and mint for that zing – children can now substitute Coke with herb chicken
