Raspberry Lemon Cake

Eggs – 3
Sugar – ¾ cup
Lemon juice – ½ cup

Boiling water – ½ cup
Softened butter – ½ cup
Grated lemon peel – 4 tsp

Sugar – 1-3/4 cup
All purpose floor – 2-1/2 cup
Milk – ½ cup
Baking powder – 2-1/2 tsp
Lemonade concentrate – ¾ cup
For Frosting
Softened cream cheese – 2 packs
Butter – 6tbsp
Castor sugar – 3-4 cups
Lemon peel – 1-1/2 tsp
Lemon juice 4-1/2 tsp
Vanilla extract – ¾ tsp
Raspberry jam – ¾ cup
- Method of Preparation
- Lemon Curd
- To make the lemon curd, combine together eggs and sugar in a thick bottom saucepan. Add to it lemon juice, lemon peel and butter and cook over medium flame for about 15 minutes. Allow this mixture to cool for 10 minutes and then refrigerate it for about 1-1/2 hour.
- Cake Base
- Preheat oven to 350 degrees. Dissolve the gelatin on boiled water and let it cool.
- Take a large bowl and blend together butter, canola oil and sugar foe 5 minutes. Add eggs to this mixture, one a t a time and beat well each time you at the egg. Next, whip in the gelatin mixture, lemon juice, lemon peel and extracts. Slowly fold in flour, baking powder and salt. Add milk if required.
- Bake this mixture inside three baking trays for at least 20-25 minutes.
- Dissolve the remaining sugar in the lemonade concentrate inside the microwave and pour this mixture onto the cakes by making small holes with a fork. Allow the hot cakes to cool completely.
- Frosting
- Whip together cream cheese and butter until the mixture forms soft peaks and then add castor sugar, lemon juice, lemon peel and vanilla and blend well.
- Arrangement
- Arrange the cakes one over the other by placing one layer and spreading it over with the jam. Place the second layer and spread it with the lemon curd and then placing the third layer.
- Cover the cake with frosting from all sides and garnish it with raspberries.
