Fast and fresh no-cook recipes that are super easy to prepare

Tomato-almond gazpacho

The ingredients you need for this lip-smacking recipe are, 6 chopped medium sized tomatoes, 1 tbsp lemon juice, ½ tsp lemon zest, 3 tbsp chopped parsley, ½-1 garlic clove, 2 tbsp chopped roasted almonds, ¼ cup olive oil, ¼ tsp salt and 2 slices of Italian bread without the crust.

Cut the bread in to one-inch pieces. Blend the tomatoes, bread, lemon juice, garlic, salt and 2 tbsp olive oil with the help of a stick blender. Take a small bowl and pour the blended mixture in it through a sieve. Use a ladle to press it and squeeze out the liquid in the bowl, discard the pulp. Refrigerate it for an hour or so. Combine parsley, lemon zest and almonds thoroughly in a bowl. Pour the parsley mixture on the soup and serve.

Chilled tofu with ginger-sesame spinach

Hiyayakko Tofu

To prepare this rich in iron recipe you need, a pack of chilled soft tofu, a pack of baby spinach, 1 tbsp soy sauce, 1 tbsp lemon juice, 2 tsp grater ginger, 1 thinly sliced green onion, 2 ½ tsp lime juice, ¾ tsp sugar, 1 ½ tsp sesame oil and ¼ cup of bonito flakes.

Blend soy and sugar with a stick blender until the sugar dissolves. Add sesame oil, ginger, lime and lemon juices to the soy and sugar and blend. Keep a colander over a large bowl, put spinach in it and pour boiling water it. Stir with the ladle until the spinach is wilted, then pour cold water to rinse, get rid of the excess water. Place the spinach in two plates and keep slices of tofu on them. Sprinkle dressing, prepared earlier and top it with onion and bonito flakes on each plate.

Chickpea Panzanella

This is one of the easiest dishes to prepare and takes a little over 20 minutes to make. The ingredients that you require are, 2 tbsp capers, 3 tbsp red wine vinegar, ½ tsp kosher salt, ½ cup sliced red onion. 2 large tomatoes diced into 1 inch pieces, ½ cup extra virgin olive oil, 12 basil leaves cut in to strips, a can of drained chickpeas, 2 cups arugula, ¾ lbs whole grain bread cut in to 1 inch pieces and 1 tsp black pepper.

Toss all the ingredients well, in a large bowl and the dish is ready to be served.
