Thanks Stanca, for this unique appetizer of scallop and bacon. A shellfish and meat, this reminds me off boiled egg covered with lamb meat. Well, as I was screening through the recipe, the idea of leaving the bacon dry stuck me. There is absolutely no problem in reversing the ingredients of the marinade into the bacon.
While scallops can be marinated in lemon juice or white wine, bacon can be fried with herbs, green chilies, and spices. If you want to keep the bacon simple, you can always sear it with red wine for a great flavor. Nevertheless, this appetizer would taste wonderful with a salsa dip or tomato sauce.
