1. German chocolate fudge

Ingredients:

14 ounces crumbled chocolate cake (about 3 cups)

1.5 cups heavy cream, divided

2.75 cups chocolate chips, divided

1/2 cup chopped peacans

2 egg yolks

1/2 cup shredded coconut

1/2 stick (4 tbsp) butter, cut into small pieces

1/2 tsp vanilla extract

1/2 c packed brown sugar

Process:

1. Take a 9″x9″ pan, line it with aluminium foil and spray it with nonstick cooking spray. Set aside the crumbled cake in a large bowl. Put the chocolate chips into a small bowl used for heating and keep it to the side.

2. Place one cup of cream in a saucepan and allow it to boil over medium heat until you see bubbles forming around the edges. See to it that the cream does not come to a full boil. Then pour the hot cream over the chocolate cake and allow it to sink into the chocolate for a minute so that the chocolate becomes soft, and then whisk the two ingredients until you get a smooth, glossy liquid which will be your “ganache”.

3. Use the ganache by pouring half of it over the crumbled cake. Stir it quickly to coat the cake evenly. You can keep the cake into the refrigerator while you prepare the second layer.

4. Take another saucepan and add butter, 1/2 cup of cream and some brown sugar, and stir it over medium heat until all the ingredients have melted. Bring the mixture close to a full boil.

5. Once the cream has touched boiling point, add 1/2 cup into the egg yolks that had been set aside and whisk rigorously. Then slide the mixture into the hot cream, stirring it continuously on low flame. Keep stirring the mixture constantly til it appears thickened, but refrain from boiling it. As the mixture thickens, get it off the heat and add coconut and pecans to it. Let it all cool for a while and then pour the contents over the cake mixture and spread it to make it look even.

6. Then pour the remaining ganache over the coconut pecan layer and spread it into an even layer. The fudge will be at its best if refrigerated for a minimum 3 hours or overnight. You can cut the fudge in whatever shape you like and present it.

2.25 cups sugar

3/4 cup evaporated milk

1 tsp lemon oil

Zest of one lemon

1 stick (4 ounces) butter, cut into small pieces

1.25 cups (9 ounces) white chocolate chips

Process:

1. Take a 8″x8″ pan and line it with aluminium foil. Spray it with nonstick cooking spray.

2. Use a saucepan for the sugar and evaporated milk. Cook them over medium heat and keep a check till the syrup starts boiling. Once boiling point is achieved, cook it further for another six minutes while stirring continuously.

3. After the mixture has been cooked, the rest of the ingredients can be added and the use of the heat comes to an end.

4. Whisk rigorously to melt the butter and white chocolate chips until the fudge appears smooth.

5. Then pour the mixture into the pan prepared at the start and allow it to cool at room temperature for 2 hours. Once firm, you can cut it into square shapes and serve.

3 cups semi-sweet chocolate chips

1 14-oz can condensed milk

1/4 cup (4 tbsp) butter

1.15 cups toasted nuts, coarsely chopped

1 tsp vanilla extract

Process:

1. Take a 8×8 or 9″x9″ pan and line it with aluminum foil. Spray it with nonstick cooking spray.

2. Take a microwave safe bowl and add butter, chocolate chips and condensed milk to it. Melt the ingredients in about 2-3 minutes.

3. Stir the ingredients to ensure that they have all melted and later add vanilla and salt to this syrup. Mix the contents well until it appears smooth. Add marshmallows and nuts to the mixture and stir it yet again.
