14 ounces crumbled chocolate cake (about 3 cups)

2.75 cups chocolate chips, divided

2 egg yolks

1/2 stick (4 tbsp) butter, cut into small pieces

1/2 tsp vanilla extract

1/2 c packed brown sugar

Process:

1. Take a 9″x9″ pan, line it with aluminium foil and spray it with nonstick cooking spray. Set aside the crumbled cake in a large bowl. Put the chocolate chips into a small bowl used for heating and keep it to the side.

2. Place one cup of cream in a saucepan and allow it to boil over medium heat until you see bubbles forming around the edges. See to it that the cream does not come to a full boil. Then pour the hot cream over the chocolate cake and allow it to sink into the chocolate for a minute so that the chocolate becomes soft, and then whisk the two ingredients until you get a smooth, glossy liquid which will be your “ganache”.

3. Use the ganache by pouring half of it over the crumbled cake. Stir it quickly to coat the cake evenly. You can keep the cake into the refrigerator while you prepare the second layer.

4. Take another saucepan and add butter, 1/2 cup of cream and some brown sugar, and stir it over medium heat until all the ingredients have melted. Bring the mixture close to a full boil.

5. Once the cream has touched boiling point, add 1/2 cup into the egg yolks that had been set aside and whisk rigorously. Then slide the mixture into the hot cream, stirring it continuously on low flame. Keep stirring the mixture constantly til it appears thickened, but refrain from boiling it. 6. Then pour the remaining ganache over the coconut pecan layer and spread it into an even layer. The fudge will be at its best if refrigerated for a minimum 3 hours or overnight. You can cut the fudge in whatever shape you like and present it.
