Chicken liver

1. Recipe 1

Ingredients

1. 175g unsalted butter, softened

2. 55g butter, melted

3. 3.450g chicken livers

4. ½ tsp freshly ground black pepper

5. 2 shallots, finely chopped

6. 1 tsp soft thyme leaves

7. 2 cloves garlic, finely chopped

8. 2 tbsp brandy (optional)

9. 2 tsp anchovy essence (optional)

Process

Divide the chicken livers in two batches. Now, in a cooking pan, add 15 grams of butter and allow it to heat up. As it gradually becomes frothy, put the first batch into it. Fry the livers for about four to five minutes now, until they become brown in the outer side and pink in the inner. Pick the chicken livers from the cooking pan and repeat the same process with the second batch. Now, work separately to put all the fried chicken livers and the juices into a food processor in one hand. At the same time, put another 15 grams of butter in the cooking pan.

When the butter heats up, put the shallots, thyme and garlic with pinch of salt and pepper and cook the same till the shallots become tender. Do not fry the shallots so much that they become brown. Once done, put everything inside the food processor, including remaining butter and blend well till it becomes smooth. Now, pour the mixture in a serving tray and refrigerate before serving.

2. Recipe 2

Ingredients

1. 225g chicken livers

2. 225g butter

3. ¼ teaspoon ground mace

4. 2 level teaspoons mustard powder

5. 2 tablespoons brandy

6. 1 level teaspoon chopped fresh thyme, or ¼ teaspoon dried thyme

7. 2 cloves of crushed garlic

8. Salt and black pepper

Process

In a frying pan, put about 25 grams of butter and heat it. Once it gets heated up, put chicken livers into it and fry them over medium heat for five minutes. Remove the pan from flame and put the chicken livers along with the juices into a blender. Melt further 150 grams of butter and put it into the blender too. Further, pour brandy and the remnant juices of chicken liver in the pan, into the blender. Also add mustard, mace, thyme and garlic, together with salt and pepper and blend uniformly. Once done, pour the ingredients into a flat tray and allow cooling. Serve with hot toast.

3. Recipe 3

Ingredients

1. 1 lbs chicken livers (clean and chopped)

2. 2-4 spoons of goose fat (or canola oil)

3. 3 large white onions, coarsely chopped

4. 4 hard-boiled eggs

5. 2 tbs cognac

6. Salt and ground black pepper

Process

Heat some oil in a pan on high flame. Add chopped onions into it and fry until they become golden brown. Now, put chicken livers and cook over medium flame. Once done, set aside the livers and the juices. Add cognac and hard boiled eggs on the fried onion and livers and mix thoroughly. With a hand blender, blend the ingredients well till a smooth texture is formed. Sprinkle pepper over the mixture for seasoning and refrigerate before serving.
