Omelet is a strict non-vegetarian affair. For vegetarians, it’s a strict no-no, but who would want to miss out this delicious food? No points for guessing. A simple and easy solution is at your step. Vegetarians who feel sorry for not being able to devour omelet can try out this vegetarian version of omelet. It’s easy to be prepared and is a foodie’s delight. A bonus point for non-veggies, who can give their traditional egg omelets a skip and try out this healthy veggie version for a change. It is a breakfast favorite and lunchbox savory for kids.

Ingredients
1. 1/2 cup semolina
2. 1/4 cup curd
3. 1 medium sized onion
4. 2 green chilies slit and chopped
5. 1 medium sized tomato, peeled and chopped to bits.
6. 2 tablespoons chopped capsicum, deseeded and then finely chopped
7. 3 tablespoons canned button mushrooms, finely chopped
8. 1 teaspoon red chili powder or according to your taste. ( If you want you can omit it)
9. a pinch of salt for seasoning
10. few drops of olive oil or any other oil for greasing the pan
11. tomato-garlic sauce to serve
Process
1. Peel the onions and finely shred them.
2. Pour the semolina into a bowl and add the curd into it. Mix the two well. Add chopped green chilies and season the mixture with salt and spice.
3. Stir the mixture continuously to form a smooth batter.
4. Heat a non-stick fry pan and grease it with few drops of olive oil or any other refined oil. Pour a ladle full of batter into the pan and keep rotating the mixture with the back of the ladle till the mixture spreads evenly throughout the pan.
5. Now sprinkle the chopped tomatoes, onion, mushrooms and capsicum over the mixture and cook covered with a lid for 2 minutes. The omelet will cook in its own steam.
6. After 2 minutes, uncover and check if the omelet has become crisp and tender, using a fork.
7. If the omelet is ready, fold it over from the middle, like halving it.
8. Serve hot with tomato garlic sauce or any other sauce or any dip of your choice.
Tips
1. You can also stuff the omelet with any other filling of your choice as tomato-cheese or spicy cottage cheese and mushroom filling.
2. If preparing this omelet for kids, you can omit green chilies and red chili powder if you want.
