Chitterlings: Feeding on inedible scrap

hurkaChitterlings or chichirrones in the Southern part of the United States is the weirdest food that I have come across in the North American continent. Why call the Japanese cuisine the weirdest, even in Latin America they eat pork’s intestines. However, Chitterlings are traditionally prepared during the holiday season and are eaten with a larger part of the meal consisting of collard greens, fried chicken and other traditional delicacies.

Chitterlings are properly thawed before cooking to remove all the foreign materials or bacteria like the salmonella. Chitterlings are then boiled in water until tender and are simmered with onion, garlic, salt, and red pepper seasonings. It is paired with a hot sauce or vinegar.

How weird it is? I do not know as I have never tasted it. But the components are definitely weird as the chitterlings are taken from a freshly slaughtered pig…hope you have read my previous post on Japanese Shiokara, quite a resemblance…feeding on inedible scrap.
