Recently I came across an appetizer, which uses Ricotta cheese for stuffing mushrooms and then it tops the mushrooms with mozzarella cheese. Nevertheless, it would have tasted great with a tofu, coriander-mint sauce and chili stuffing, instead of a cheese one.
