1. German chocolate fudge

14 ounces crumbled chocolate cake (about 3 cups)
1.5 cups heavy cream, divided
2.75 cups chocolate chips, divided
1/2 cup chopped peacans
2 egg yolks
1/2 cup shredded coconut
1/2 stick (4 tbsp) butter, cut into small pieces
1/2 tsp vanilla extract
1/2 c packed brown sugar
Process:
1. Take a 9″x9″ pan, line it with aluminium foil and spray it with nonstick cooking spray. Set aside the crumbled cake in a large bowl. Put the chocolate chips into a small bowl used for heating and keep it to the side.
2. Place one cup of cream in a saucepan and allow it to boil over medium heat until you see bubbles forming around the edges. See to it that the cream does not come to a full boil. Then pour the hot cream over the chocolate cake and allow it to sink into the chocolate for a minute so that the chocolate becomes soft, and then whisk the two ingredients until you get a smooth, glossy liquid which will be your “ganache”.
3. Use the ganache by pouring half of it over the crumbled cake. Stir it quickly to coat the cake evenly. You can keep the cake into the refrigerator while you prepare the second layer.
