Which vegetables and oil are used to prepare healthy Mediterranean diet recipes that are fit for diabetics as well?

My husband is a diabetic, but it doesn’t make a lot of difference in his diet as such! He is such a foodie, and I know it becomes really difficult for him to resist food with a lot of butter and oil! Nonetheless, he loves seafood and Mediterranean recipes specifically! I have gone through various Mediterranean diet recipes, but not many of them are seafood, moreover, there is a repetition of several recipes on the websites. I just want to know from some health expert what all ingredients, specifically vegetables, and oil is important for Mediterranean diet recipes that could be equally beneficial for my husband, as I believe, I’ll have to experiment with the recipes now!
