How to make a tasteful nachos recipe without using jalapeno over it?

I like spicy food a lot, and I am a big time foodie, but I love cooking for my family as well! After getting the recipe of spicy nachos, I prepared it at home using jalapenos, and my kids and husband could not stop raving about the taste for sometime (Sorry, couldn’t be modest over here!). Nonetheless, I am planning to prepare the same recipe for the Thanksgiving Day, but I am keen on using some other filling on the top of the corn chips, as I am afraid my parents-in-law would not appreciate too spicy food! Although I use a lot of cheese, but I wanted to know if it could be prepared in a manner, that it doesn’t go tasteless f I don’t use jalapeno over it! Please advice.
