Why my low cholesterol grilled sandwich recipe end up with cold meat and cheese?

Every time I try to make grilled sandwich I ended up with cold meat and cheese that does not melt. I was watching the grilled sandwich recipe which is a low cholesterol recipe and the recipe was made with same ingredients and method as I use to do it. But I don’t know why I end up with cold meat. I want to know as I use a skillet so should I pre heat to moderate before putting the ingredients?
