1. Butter Eggs

  1. 1 Egg
  2. 3 tsp butter
  3. salt and pepper to taste

Process:

  • Whisk the egg in a small dish till frothy.
  • Stir in the salt.
  • Heat the butter in a pan and when hot, pour in the egg.
  • Cook on gentle heat till the egg sets.
  • Serve on top of a toast and sprinkle pepper before serving.

  • Cook until the other side is golden brown too. Sprinkle a little salt, pepper and some grated cheese onto the egg and cover for a few seconds, allowing the cheese to melt.

  • Preheat an oven to 200°C.
  • Brush 4 muffin molds with melted butter and line the sides and bottom carefully with the slices of bread.

  • Crack an egg into each of the mold and season with salt and pepper. Top it with a little ham and a bit of the cheese.
  • Bake for 15 minutes and unmould.

Process:

  • In a bowl, whisk together the eggs and the rest of the ingredients (except the oil).
  • Heat oil in a non-stick pan.
  • Dip pieces of sliced bread in the mixture and coat them evenly.
  • Fry on both sides, over a low flame.
  • Serve with any chutney or sauce of your choice.

  1. 3 eggs (hard boiled)
  2. 1 boiled potato
  3. 1/2 capsicum
  4. 1/2 onion

Process:

  • To prepare the egg salad, cut the eggs into cubes. Do not worry if the yolk crumbles.
  • Chop all the vegetables into cubes as well.
